Dear Creatives, Here is a new recipe we just made last night! Oh, so yummy!! I had to share it with you. Tamale Pie!!
I have always wanted to learn how to make tamales! They are something we love, but I have heard they are so time consuming to make. It never dawned on me before to make a Tamale Pie so when I came across a recipe or two I knew I had to try it. I ended up adapting a recipe and then even found one that looks good for using ground turkey. My adapted recipe uses lean ground beef! I know it will be a hit if you try it! It looks similar to the one above, but I have yet to take the photo. I hope to add it soon!
- 1 lb. lean ground beef
- 1/2 onion chopped
- 2 cloves garlic chopped
- 10 oz. enchilada sauce
- 1/2 can whole kernel corn
- 1/2 cup chopped olives
- salt & pepper to taste
- Yellow Corn Meal
- 4 oz. can diced green chilis - 1/2 for pie filling
- 1/2 cup shredded jack cheese
- 1/4 cup shredded Mexican 3 cheese
- non stick spray
In a non stick skillet or frying pan brown ground beef. Drain excess grease. Add chopped onion & garlic continue to cook. Add salt & pepper to taste, enchilada sauce, 02oz (1/2 can) of diced green chilies, corn and black olives. Reduce to low Simmer.
Preheat oven to 425*
In a pot cook corn meal mush to directions on box. (2 1/2 cup water 1 tsp. salt & 1 1/4 cups yellow corn meal.) When cooked per box directions; then spray non stick coating in your 9 x 13 or 9x9 pan, add corn meal mixture to sprayed pan on bottom & sides while reserving 1 1/2 cup for top of tamale pie.
Bake for 10 minutes at 425*
Add 1/2 can diced green chilies to reserved cornmeal mixture.
Take cornmeal crust out of oven & add beef mixture, then sprinkle with shredded jack cheese & top with the reserved corn meal mixture.Optionally you can add shredded 3 cheese to top of corn meal topping. Return to oven & bake for 20 more minutes.

This recipe was adapted from Taste and Tell blog. I might just have to try this recipe from Lindsay Olives for Tamale Pie using ground turkey next time, but I have to say just using lean ground beef this recipe I adapted was a big hit!!
